A Chef de Partie primary role is to manage the preparation, cooking, and presentation of meals. Duties associated with this role including directing chefs in their section in preparing, cooking, and presenting dishes; ensuring strict health and hygiene standards and trouble-shooting any problems.

Duties and Responsibilities

– Working with the Head/sous Chef and the kitchen team to maintain high standards in the quality of food both as to its preparation and its presentation
– Working in all areas of the kitchen depending on the daily needs of Head Chef Preparation of a whole range of food
– To observe all Company Food Hygiene and Health and Safety policy
– To assist the Head Chef to check the completeness of all suppliers’ deliveries and the correctness of their invoices
– To set out, maintain and monitor high standards of cooking and presentation
– To be aware of current food trends with regard to presentation and style and help with new menu ideas
– Ensuring kitchen is left clean and tidy at all times
– Ensuring that all completed food is correctly wrapped, labelled and put in out-fridge for each event
– To ensure that all completed jobs are fully checked off before shift ends
– Controls cost by minimizing spoilage, waste, proper storage and exercising strict portion control
– Ensure that cost control policies and procedures are followed
– Ensures freshness and suitability of products used by the section and that they are stored properly
– Ensures smooth running of the section during service

Beauty entrepreneur George Hammer has teamed up with long time friend and East Dulwich Deli founder, Tony Zoccola to open a classic British restaurant.

Tony and George are two English gents on a mission. With such an abundance of quality produce, and hundreds of passionate, dedicated suppliers all over our island, George found the lack of authentic British eateries disappointing, commenting that “Every time I took foreign clients out for a meal, we’d have difficulty finding a great, relaxed British restaurant, so it would always end up being Italian, Japanese or French instead.”

On the premises of a former butcher shop built in 1887, the restaurant is situated in the heart of Mayfair on London’s North Audley Street. Joints of roasted meats will be carved in the window to entice customers in, and a small café area at the front will be offering quick freshly made hot bloomer sandwiches and lunch options.

Alternatively, stylish and cosy seating and table service at the back will be bookable each day from 7am-10pm for elegant, but informal breakfasts, lunches, afternoon teas and dinners.

The Great British will satisfy George and Tony’s cravings for the freshest fried eggs, the finest British cheeses, quality meat from local butchers, and an unpretentious, British menu of vintage classics and lightened up favourites.

Key responsibilities:

– Create personal relationships with guests to ensure repeat custom
– Identify problems during service and resolve quickly and efficiently
– Take orders and payments from guests
– Manage seating timings and guest turnover
– Train new staff where necessary
– Light cleaning and miscellaneous tasks

Required experience/skills:

Proven experience in a high standard restaurant
– Demonstrate attention to detail and time management
– Excellent spoken English
– Ability to prioritise and multitask
– Ability to work under pressure in a calm and effective manner
– Conversant in language/s other than English
